Browned Butter Vanilla Madeleines
I’m addicted to these simple, vanilla browned butter madeleines! I’m not someone who likes super complicated and overly sweet flavors, which is why this madeleine recipe is a go to for me! If you agree, you’ll love these.
Ingredients:
2 sticks unsalted butter
1 1/2 cup of flour
1/2 cup of sugar
1 tablespoon of baking powder
1 teaspoon of salt
1 tablespoon of vanilla (vanilla bean paste is ideal)
1/4 cup of room temp milk
3 room temp eggs
In a large saucepan, melt the butter. Once it becomes foamy, light amber colored, and smells nutty, the butter has browned. You’ll see little specks of brown bits on your pan, don’t fret, those are packed with flavor. Just scrape them with your spoon and mix it in with the rest of the melted butter. Add vanilla and mix together. Set aside.
In a medium bowl, add flour, salt, and baking powder. Combine and set aside.
In another bowl, add eggs and sugar. Whisk with a hand mixer until opaque in color. Add in milk, combine. Add in browned butter, mix in gently. Add in flour, fold in gently and do not over mix. Cover with plastic wrap and place in the fridge for 2-3 hours (or overnight) until batter firms up.
Set oven to 400. Butter your madeleine pan/molds. Scoop batter into the mold. Bake at 400 for 5 minutes and then lower the temp to 375. Bake for another 10 minutes. Edges should be crispy golden brown. There should be a hump. Remove from oven and let cool.
