Double Chocolate S’mores Cookies

Ingredients:

1 cup semi-chocolate chips

5 tbsp butter

2 eggs

1/2 cup cocoa powder

1 tbsp of vanilla extract

2/3 cup of flour

3/4 cup white sugar

1 tsp baking soda

1 tsp kosher salt

1/2 cup crushed graham crackers'

large marshmallows

*top with extra chocolate chips and graham crackers if desired.

In a microwave safe bowl, add 1 cup of chocolate chips with the butter. Melt chocolate in 20 second intervals until fully melted and smooth. Set aside.

In a large bowl, add eggs, vanilla, and sugar, Whisk until combined. Add melted butter and whisk until fully incorporated and smooth. Sift in flour, cocoa powder, salt, and baking soda. Mix together with a spatula. Add crushed crackers and fold together, The batter will resemble a brownie dough texture, thick and semi-sticky. Cover with plastic wrap and place in refrigerator for 1-2 hours.

Preheat oven to 350. Line a baking sheet with parchment paper. Scoop dough and place a large marshmallow in the center. Roll the dough into a ball between your hands until the marshmallow is mostly covered. If it looks chunky that’s okay, that’s what we are looking for!

Place in the oven and bake for 15-20 minutes. Let cool before serving.
