Thumbprint Cookies
Ingredients
2 stick unsalted butter (room temp)
2 egg yolks
2 1/2 cups flour
2/3 cup granulated sugar
2 tbsp vanilla extract
1/2 salt
Jam of choice
Preheat oven to 350.
In a bowl, mix together butter and sugar until creamy and fluffy. Add egg yolks and vanilla extract and mix until full incorporated.
Add flour and salt, fold together. If you find the dough hard to mix and is dry, knead the dough with your hand until everything is full incorporated. Cover the bowl with plastic wrap and place in the fridge for 30 minutes to 1 hour.
Line a baking sheet with parchment paper. With a small cookie scoop, scoop dough and roll into a ball with your hands and place on sheet. Using a small tsp or your thumb, press down on the cookie dough until a small hole forms in the middle. Add a little jam in the center. Bake for 20 minutes!
The cookie will not turn brown, so make sure you don’t over bake. Cool before serving!
