Caramelized Onion Bucatini
The perfect combination of sweet, salty, and peppery 🧄 I love a simple, easy pasta dish made with just pantry ingredients. You’d be surprised how delicious and satisfying a meal can turn into with stuff you already have on hand! This Roasted Garlic and Caramelized Onion Pasta is creamy, light and the perfect meal for when you have that pasta craving 🤤
Ingredients
1 garlic bulb
Bucatini pasta
Olive oil
2 tablespoons of unsalted butter
2-3 onions, sliced
1/2 cup of heavy cream or coconut milk
1 cup of vegetable broth
Salt
Crushed black pepper
1/2 of grated Parmesan
Set oven to 400. Cut the sides of the garlic bulb and place on a piece of foil. Drizzle olive oil and sea salt over the garlic. Wrap the garlic fully in foil, place on a baking sheet and roast for 40 minutes. While that’s roasting, cut up onions. In a large pot or skillet, melt a tablespoon of butter and toss onions until fully covered. Cook over low medium heat until the onions turn brown and soften. This will take about 40-45 minutes. Make sure to stir every 10 minutes. Remove garlic and let it cool. Boil pasta, salt the water generously.
In the last few minutes of the caramelized onions, add about 1/4 of the vegetables broth and let simmer for 5 minutes. Squeeze out the roasted garlic and add it to the onion mixture. Add in heavy cream. Combine everything together. Add in pasta and some pasta water. Taste for salt and pepper. Add in Parmesan cheese to finish. Toss everything together. Serve with more crushed black pepper and Parmesan!
