Hearty Tuscan White Bean Soup

Say goodbye to stuffy noses 🤧 this spring with this Hearty Tuscan White Bean Vegetable Soup!

Ingredients:
1 can of white beans (Cannellini beans)
2 celery sticks
2 carrots
1 onion
4 cloves of garlic
2 tablespoons of tomato paste
4 cups of vegetable broth
1/4 cup of heavy cream or coconut milk
2 cups of spinach
1 bunch of parsley
Dried parsley for garnish
1 teaspoon of cumin seeds
1 teaspoon of turmeric powder
1 tablespoon of cayenne pepper
1 tablespoon of red pepper flakes
1 tablespoon of salt and pepper
1 tablespoons of Italian seasoning

Star by prepping all your vegetables. Dice the carrots, onions, celery, garlic, parsley, and washed spinach. Set aside. In a pot, drizzle some olive oil and sauté the onions and garlic until they slightly soften. Add in carrots and celery. Add in all your spices and tomato paste. Continue to cook them until softened. Add in the vegetable broth and beans. Simmer over high heat for about 5 minutes then cover the pot and let it simmer for 10 more minutes. Remove lid and add heavy cream, parsley, and spinach. Stir everything together until the spinach has fully wilted. Serve with dried parsley on top with bread!
