Caramelized Onion Chickpea Salad Sandwich
Ingredients:
2-3 large yellow onion
1 can chickpeas, drained and rinsed
4 tbsp of olive oil
2 garlic cloves, grated
2 tbsp balsamic vinegar
1 tbsp maple syrup OR 1/4 cup of brown sugar
Handful of romaine lettuce
Handful of chives, diced OR dried chives
1/2 cup of plain yogurt
1/4 cup of mayo
1 tbsp of cayenne pepper
1 tsp of paprika
sprinkle of red chili flakes
Juice of half a lemon
1 tbsp of lemon zest
Salt and pepper to taste
Optional: sourdough bread, greens of choice, mustard, cucumber and or/cheese.
Start by cutting and thinly slicing onions. In a large skillet, heat olive oil and cook down onions until they become jammy and golden brown. Add balsamic vinegar, garlic, and maple syrup. Toss together. Sprinkle salt and pepper. Drain and wash chickpeas. In a large bowl, add chickpeas and start to mash them to desired texture. Once the onions are caramelized, add to bowl with chickpeas. Add mayo, spices, lemon, zest, chives, yogurt, and more salt and pepper. Combine everything together.
Assemble in bread of choice with lettuce, cheese, tomato, etc
