Spicy Vodka Pasta (no vodka)
Ingredients:
1 cup rigatoni pasta
3 cloves garlic, minced
2 tbsp olive oil
6 tbsp tomato paste
1/2 cup of heavy cream
1 tbsp of red pepper flakes
1 tsp salt
1 tsp pepper
1/2 cup parmesan cheese
1 tsp dried basil
In a large pot, bring water to a boil and cook pasta. While that cooks, heat olive oil in a large saucepan. Add garlic and cook until slightly golden brown. On low-medium heat, add tomato paste, salt, pepper, heavy cream, dried basil, and red pepper flakes. Whisk until smooth and until sauce has thickened. Add cooked pasta with 1/2 cup of pasta water to sauce and toss until fully coated. Mix in Parmesan cheese.
