Creamy Spinach Pesto Pasta

Ingredients:
2-3 cups of spinach, washed and boiled
1 cup freshly grated parm
1/2 cup of pine nuts or walnuts
5 basil leaves
1/2 cup of olive oil
Salt and pepper to taste
Bucatini pasta
3 garlic cloves

Start by washing your spinach thoroughly in cold water and set aside. Grate your Parmesan cheese in a bowl and set aside. Start boiling pasta. Boil your spinach until it softens and quickly remove it and place it in a bowl of ice water. Once cool, squeeze out excess water from the spinach and place into a blender or food processor. Add your garlic, basil, nuts, salt, pepper, and Parmesan. Blend until smooth, while you slowly add in your olive oil. This is a good time to taste if it needs additional salt or pepper. Add blended mixture to a large saucepan and let it simmer for about 5 minutes over low heat. Add a little pasta water. Add bucatini and stir until fully coated. Top with extra Parmesan! Enjoy!
