Lemon and Parsley Rainbow Carrots
One of my favorite veggies π₯ π€ and the secret to glowing, clear skin! Adding carrots to your diet is one the best holistic tips I can give you. Carrots are a great source of Vitamin A, fiber, and antioxidants that can support you in your hormonal balance journey. Eating them raw or roasted is highly recommended, so that you can gain all its nutritional properties. Hereβs how I make my Lemon and Parsley Roasted Rainbow Carrots:
Ingredients:
Rainbow carrots (washed well, stems cut)
Olive oil
Parsley
Half of one onion, diced
2 cloves of garlic, minced
1 tablespoon of coriander seeds
Salt and pepper
1 teaspoon of cumin seeds
1/4 cup of parsley, chopped and minced
Freshly squeezed lemon juice
Set oven to 400. Start by washing your carrots very well. Cut the green stems off. Set aside on a baking sheet. Chop your parsley, onion, and garlic. Set aside in a bowl. Drizzle olive oil over your carrots and massage them well with your hands. Add your salt, pepper, and spices. Massage. Add your parsley and onion. Toss with your hands until fully coated. Place in the oven and roast for about 30 minutes. Test how soft they are with a toothpick, you want them to be tender not hard. Once done squeeze lemon juice over the carrots.
