Creamy Lime and Spinach Orzo

I can’t get enough of this One Pan Creamy Lime and Spinach Orzo 😛 This orzo is cooked and soaked in vegetable broth, making it super creamy and flavorful. If you’re running out of time and too lazy to cook dinner, this is the perfect cozy dish made in under 30 minutes.

Ingredients:
1 cup dry orzo
2 cups vegetable broth
1/2 cup grated Parmesan cheese
1/2 cup of milk or heavy cream
1 cup of spinach, washed and chopped
Half of one white onion, diced
3 cloves of garlic, minced
Zest of one lime
Juice of one lime
3 tablespoons of butter
Salt, pepper, red pepper flakes, and paprika

Start by heating a large skillet, add butter, garlic and onion. Cook slightly until fragrant. Add in your dry orzo and consistency stir for about 5 minutes. Add in one cup of the broth, save the rest. Add in spinach and let it cook down until it wilts. Add in your salt, pepper, red pepper flakes, and paprika. Stir consistently. Stir in zest and lime juice. Allow the orzo to simmer for 10 minutes and slowly add in more broth. It will thicken as it continues to cook. Stir in Parmesan cheese and milk. Depending on what consistency you like, you can continue to add in more broth for more of a “soup” texture. Serve with extra Parmesan on top and some bread!
