One Pan Tomato and Garlic Orzo
Ingredients:
1 small red onion
3 garlic cloves, minced
2 tablespoons of tomato paste
Cherry tomatoes
1 cup of orzo
2 tablespoons of olive oil
Splash of water
1 cup vegetable broth
3 tablespoons of heavy cream
1 teaspoon of paprika
1 teaspoon of pepper
1 tablespoon of salt
1 teaspoon of red pepper flakes
In a large skillet, add your olive oil, salt, pepper, paprika, red onion, garlic, tomato paste, and splash of water. Cover pan and let the tomatoes simmer over medium low heat for about 10 minutes. The tomatoes will soften over time, you can gently press the tomatoes down with the back of a spoon to speed up the process! Add the vegetable broth and orzo. Mix. Cover pan and let the orzo cook for about 15-20 minutes until orzo is al dente. Add some heavy cream, let the orzo simmer for another 5 minutes and then turn off heat. The orzo will absorb all the oil, broth, and water. The finished product should be super creamy! Top off with basil and Parmesan!
