Raspberry Compote
Raspberry Compote 🧸 Raspberries may not be in season right now, but I couldn’t resist making a fresh batch of this tart compote! Tip: add chia seeds for some extra fiber! Top this compote on ice cream or with toast and butter!
Ingredients:
2 cups of raspberries, washed
1 zest of a lemon
1 zest of an orange
1 tablespoon of cornstarch
Lemon juice - from one lemon
1/2 heaping cup of coconut sugar
Pinch of salt
Teaspoon of ground cardamom
In a saucepan, add your raspberries, sugar, lemon juice, salt, zests, cornstarch, and ground cardamom. On medium high heat, let simmer for 10 minutes while continuously stirring. Be patient, the liquid will thicken! Turn off heat and let cool. Place in a washed jar and refrigerate!
