One Pot Ratatouille Orzo

Ingredients
1 eggplant
2 zucchinis ( one yellow, one green)
1 pint of baby cherry tomatoes
1 large white onion, diced
5 garlic cloves, minced
3 cups chicken broth or vegetable broth
2 tablespoons of tomato paste
1 cup orzo
Olive oil
Salt, pepper, red pepper flakes
3-4 dried bay leaf
Start by prepping your vegetables, Cut zucchini, eggplant, onion, and garlic. In a large saucepan or pot, heat a few tablespoons of olive oil. Throw in garlic and onion, cook until they soften. Add in all your vegetables, salt, pepper, and pepper flakes. Let them cook for about 8 minutes. Add in 1 cup of the broth (save rest), cover pan and let the vegetables cook for another 5 minutes on high heat until they soften. Remove lid, add remaining broth, tomato paste, and orzo. Cover lid and let it simmer for 15 minutes, Make sure to continue to stir so the orzo doesn’t stick to the pan. Finished meal should be super creamy, Throw in dried bay leaf at the end for more4 flavor and fragrance! Serve with bread.
