Roasted Thyme Strawberries with Whipped Honey Ricotta

Ingredients:

1 pound strawberries, washed and cut
Sourdough bread
Thyme
1 lemon
1 cup ricotta cheese
Honey

Set your oven to 400. Wash strawberries really well and slice. In a baking sheet, add your strawberries, 5-6 springs of thyme, juice of one lemon, and zest of one lemon. Drizzle about 1/4 cup of honey. Roast in the oven for about 20 minutes or until you start to see juices coming out of the strawberries. Smash with a fork halfway if you want more of a jam like texture. While that’s roasting, take 1 cup of ricotta and place into a blender or food processor. Blend until smooth and creamy. Toast sliced bread with some butter. Remove strawberries from oven and let cool. Spread ricotta on toast, place strawberries, and top with more honey and thyme.
