Vegan Snickers Bars

Homemade Vegan Snickers! Not the real thing of course, but ten times more nutritious! Every once in a while, I’ll indulge in one of my favorite chocolate bars, but even better to make a vegan, healthier version right at home! Low in sugar with a creamy date filled caramel center, you will devour these bars!

Ingredients:

For the caramel layer:

1 cup of pitted medjool dates, soaked in hot water

1 cup of plain peanuts (I used lightly salted)

For the nougat layer:

1 can of coconut cream

1/2 cup of oat flour

1 teaspoon of salt

1/2 cup of unsweetened peanut butter

Chocolate coating:

12oz of dark chocolate chips

2 tablespoons of coconut oil

Start by making the nougat layer. In a large bowl, add coconut cream, peanut butter, salt, and oat flour. Combine everything together until super fluffy. The texture should look pillowy, almost like marshmallow fluff. In a 8x8 baking dish, line the dish with parchment paper. Add the nougat filling, spread it out evenly. Place in the freezer for 20 minutes.

For the date caramel, remove pits from the dates and add to a bowl. Cover the dates with hot water and soak them for 10 minutes. Add the dates (and the leftover water) to a blender and blend until smooth. Remove dish from freezer and add the date caramel over the nougat, Add the peanuts over the top and press them down into the layers. Place back in the freezer for 30 minutes to an hour until completely frozen.

After an hour, remove the parchment paper from the dish and cut the caramel nougat layer into snicker shapes, you can also make them mini bars if you desire. Melt the chocolate with coconut oil in the microwave. With a fork, carefully dip the bars in chocolate until fully coated and place them on a pan lined with parchment paper. Place back in the freezer for 45 minutes until the chocolate has hardened. Enjoy!
