Creamy Spinach Pasta

Tired? Low energy? This iron packed recipe is going to change the game for you! Super creamy, nutty, and loaded with lots of flavor and wholesome ingredients, this Spinach Pasta is my go to meal before and during my scheduled period!

Ingredients:

5oz of baby spinach, washed and boiled
1 cup freshly grated Parmesan cheese
1/2 cup of pine nuts or walnuts
1/2 cup of olive oil
Salt and pepper to taste
Rigatoni pasta (or pasta of choice)
3 garlic cloves

Start by washing your spinach thoroughly in cold water and set aside. Grate your Parmesan cheese in a bowl and set aside. Start boiling pasta until al dente. In a pot, add water and spinach. Boil your spinach until it softens and wilts, quickly remove it with tongs and place it in a bowl of ice cold water. Once cool, squeeze out excess water from the spinach and place into a blender or food processor. Add your garlic, nuts, salt, pepper, and Parmesan. Blend until smooth, while you slowly add in your olive oil. This is a good time to taste if it needs additional salt or pepper. Add blended mixture to a large saucepan and let it simmer for about 5 minutes over low heat. Add a little pasta water. Add rigatoni and stir until fully coated. Top with extra Parmesan! Enjoy!
