High Protein Tomato Rigatoni
You can turn a simple can of fire roasted tomatoes into a creamy, high protein pasta sauce from ingredients straight out of your pantry! 🍅🤍
Ingredients:
1 can of white kidney beans (cannellini beans)
1 can of diced fire roasted tomatoes
Rigatoni
1 white onion, diced
4 cloves of garlic, minced
3 tablespoons of olive oil
1 tablespoon of red pepper flakes
1 tablespoons of ground black pepper
1 tablespoon of salt
1/4 cup of heavy cream or coconut milk
1/2 cup of pasta water
Dried parsley for garnish
Parmesan for garnish
Start by dicing onions and garlic, set aside. Rinse and wash beans, add to blender. Open can of tomatoes and add to the blender. Blend everything until smooth. Boil and cook pasta, save 1/2 cup of pasta water and set aside. In a large pot or pan, add olive oil and cook onions and garlic until slightly brown and aromatic. Add in blended tomato mixture to the pan and let simmer for 10 minutes .The mixture will be thick. Add black pepper, salt, red pepper flakes, and pasta water. Combine everything together. Add in pasta and toss until fully coated in the sauce. Top and serve with freshly grated parmesan cheese and dried parsley.
